confessions of a dessert-aholic, v.2

My friend Alisha's status on facebook the other day went something like this: OMG my house smells amazing with these cooking in the oven: Sopapilla Cheesecake.


Seriously, I almost left the house that second to go to the grocery store. Those two words in the title of the same dessert? Honestly?!!

My original plan was to make it for the Bachelor Pad Finale (I can't believe I just admitted to watching that on my blog...) My sister-in-law and I sort of started a cheesecake thing during the last Bachelorette and so it seemed fitting, and also appealing because it's SOOO much easier than cheesecake.

For a number of reasons I got home late and it didn't get made. Sad :( And then Tuesday night around 8 pm my husband tells me he needs to bring a dessert to work tomorrow. Thanks for the heads up babe! Really, it was perfect because I'd already picked up everything for this divine creation, but I was in a bit of a dilemma because it's always dangerous to make something you've never actually tasted for an event. But I decided to do it anyway since it had come with such a raving review from my friend. All day Wednesday I waited for an email from Matt, and finally got one that said "good reviews on the dessert." :) Phew! Today he emailed me for the recipe too (at his coworkers' request)! Even better!

Here you go friends. Make it. And if you're feeling indulgent...top it with honey & ice cream.


*At my friend's suggestion, I added an egg to the cream cheese mixture to make it a little more cheesecakey. I think it was a good move. And I also used only 2 tubes of crescent rolls.

Thanks Robin for the recipe!! I can't wait to try this yummy treat!! How is your little one? Brody is walking more than crawling, climbing more than sitting, unloading everything in reach! Oh the fun of a 1 year old!! Hope all is well with your family!
